Tomato and Cucumber Salad

Ingredients
- 2 cups grape or cherry tomatoes, sliced lengthwise
- 1 English cucumber
- 3 tbsp basil, chopped
- 2 cloves garlic, minced
- 2 tbsp capers, rinsed and chopped,
- ¼ cups apple cider vinegar
- 5 tbsp extra virgin olive oil
- ½ tsp kosher salt (to taste)
- ½ tsp black pepper (to taste)
Instructions
- Combine all ingredients in a bowl and mix well. Serve at room temperature. Do not refrigerate or tomatoes will lose their flavor.
