When I was 20 years old, I moved into my first apartment without a roommate. I had some extra time on my hands and decided that I should do something to better myself. I decided to take up cooking because I love to eat and because I thought it would be a good way to impress women on a third date.
At first I was very by-the-book and followed every recipe to the letter and measured every ingredient. This took forever and was very tedious. As I practiced, my purpose of simply impressing girlfriends changed to developing into an actual passion. I learned to try everything and if you don’t like it, try it again somewhere else. I learned that some rules must be followed and some rules must be broken. I learned that every recipe can be made better or simpler or both while still improving the dish. I learned that I loved to cook for people and that my favorite words to hear are, “This is the best ____ I have ever had.”
So this is my contribution. Most of my recipes are adaptations from far better cooks and chefs than me. But this is my effort to present the food I love to make in a better or simpler or more accessible way.
