It’s been cooling off which means that it is time to do less grilling and more soups and stews. Avgolemono is my favorite soup. I think that if Greece focused on making this soup its primary export, then they would no longer be in financial crisis.

This is a surprisingly simple dish that I like to make when it starts getting cold out and especially around the holidays. I like to make extra because it makes great leftovers and the pork and glaze taste like Christmas on a plate.
grilled red onions, tzatziki, tomato and cucumber salad
I like to have a few dishes up my sleeve for when I am making dinner for a lot of people. This one scales very easily since most of the work is done on the grill or simply mixing the tzatziki and salad. You can do everything but the grilling and steaming of the pitas in advance so that when your guests arrive you can entertain rather than frantically cook. It also saves well for great leftovers.

Sometimes you make a dish because you need to use what is in your refrigerator, and sometimes you make a dish because you have a craving, or you want to try something new, or you need something quick. But there are certain times when you want to make something really great for someone. This is one of those dishes.
